I've been sitting in front of this thing all morning and fast developing goggle eyes getting my accounts up todate. It's a struggle I have to admit, the distractions are: i) I'm hungry and thinking about food (that won't come as a surprise to anyone that knows me!) and ii) I'm thinking what I shound snap for the POTD. OK food wins and it has to be something quick and tasty. I'd seen this the other night in one of the recipe books, it seems so long ago we were eating this on the sun drenched patio, I'd almost forgotten how good this is. So there we have it... Tomato, Shallot and Rocket Salad. (It should be basil really but we're out of basil!) It also doubles up to be my POTD!
