During the seige of Sarajevo the bakers were so fundamental to the survival of the city that the Serbian artillery targeted bakeries. This baker worked in a small bakery that turned out bread for the Army. Because there was no electricity the dough had to be kneaded by hand. When I shot photos of this man and his fellow bakers doing the kneading he looked up and said "We're real bakers again."
