Photo 5-27: On Christmas Day we'd dinner as usual (four out of the five years from 2003 - 2007)@ The HK Football Club. Originally I'd selected the Australian wines, Penfold Grange and Devil's Lair chardonnay but switched to Pichon Lalande and Laurent-Perrier at the last minutes (let the '94 Grange to improve further). The Pichon is still young and the L-P not chilled enough. I should have decanted the wine (three hours in advance at home)and put the champagne in the freezer too.
