Making Fondant

Chef Michele does it again! She had always been curious about making fondant, a gourmet pastry couverture mostly made out of sugar. It's heated to just the right temperature, and then continuously folded on a marble slab. It seems really runny all the time, but at the end very suddenly turns into the desired consistency. I think you can tell that chef Michele was pleased with her first attempt at making fondant!

By the way, chef Michele's husband was very pleased with the performance of his 20D! He couldn't have done this with the 300D. Only the write speed of the 20D combined with its high ISO performance made these pics possible.
