Harry has made this special dessert/breakfast dish a few times lately and
each time it turns out better than the last.
He starts with a Granny Smith apple cut into slices, rolled in a cinnamon/sugar
mix then sauteed in butter in a nice even circle in a large frying pan (skillet!)
once the apples are cooked he pours over his secret batter, I know he uses
bread flour, as I saw the bag out on the counter today and queried whether he
had got the right bag out of the cupboard. He replied that yes he needs to use
bread flour as it contains more protein which gives a better batter.
He cooks it on the stove for a while then places the pan into a hot oven where it
rises up very high as you can see! I had to take a quick shot as he opened the
oven door very briefly for me, if it is left open for more than a split second
the thing collapses.
It is delicious with lemon juice and the maple syrup we saw being made yesterday.
