El Roy's overnight success anything but - Petaluma Argus for Beginners


At a time when trained chefs and owners of food trucks appeared to be coming out of 2 different spheres of the food world, Roy Choi leased a truck of his own and hit the streets of Los Angeles with his unique Mexican tacos stuffed with Korean BBQstyle meat. With a pedigree that included a degree from and working at Le Bernardin and the Beverly Hills Hilton, Chef Choi may not have seemed the most likely prospect to go roadside, hawking tacosbut that is precisely what he did.


"Instead of requiring your customer to come to your dining establishment, why not bring the dining establishment to them?" Choi described. To create a Korean meal that would plug into the diverse culture of Los Angeles, Chef Choi borrowed from another ethnic cuisine that the city lovedthe modest taco. In 2008, in partnership with Mark and Caroline Manguera, Chef Choi introduced Kogi's appeal grew and business became a phenomenon.



Structure on the success of his mobile culinary service, Chef Choi now has restaurants and catering food trucks under his company 10 Grand Hospitality consisting of Alibi Room and Kogi Taqueria. Chef Choi is the author of L.A. Boy, My Life, My City, My Food, co-written with Tien Nguyen and Natasha Phan.
