Kosher marshmallows - I've seen it on more than one cookbook, and it made me hungry. My first thought was "What?" But after I read through the recipes, I realized that it's not just another "hot chocolate" recipe. No, it's an actual recipe for marshmallows. It's a terrific recipe for any holiday or special occasion.

You can buy marshmallows from your local grocery store or even online. They come in three flavors, each with its own unique ingredient list. If you don't have any gluten-free products in your pantry, you will find it difficult to bake with kosher marshmallows, as the ingredients contain gluten, which is a significant portion of most marshmallows on the market.

I used regular chocolate in my recipe, but if you're looking to be completely gluten-free, you may substitute vegetable shortening (that's what I used in my fish and chips cookies) for the chocolate. The shortening will give you the same rich flavor without the gluten. The only other ingredient difference I found in the kosher marshmallow recipe is the powdered gelatin made from fish broth.

To make the jelly-like marshmallow treat, mix together softened cream cheese, softened butter, flour, confectioner sugar, molasses, vanilla, and kosher marshmallows. By stirring this mixture constantly, you ensure that it won't stick or melt in the pan. Once you're happy with the consistency, use a rubber or plastic bowl to place it in the freezer while preparing the rest of the ingredients.

To prepare the other ingredients, place all the ingredients except for the gelatin in a double-square metal baking tray. You'll know they are ready when the marshmallows begin to stiffen. Once stiff, remove them from the baking tray and set aside. Now you're ready to set about thirty or so bags of your favorite vegan cookie stock in a zip lock bag and pop into your refrigerator.

In a saucepan, heat vegetable shortening until it's a bit damp and then add the confectioner sugar. Stir until the shortening is melted and then turn off the heat. Let cool and then spoon the melted chocolate over the dandies. Once the chocolate is melted, fold in the marshmallows until smooth and velvety.

kosher marshmallows After you've added the toppings, place your homemade kosher marshmallows on top and then refrigerate them. Since my stock exchange was a success, I plan on making more of these at least once a month. If you find these too expensive to purchase on your own, don't fret because there are plenty of marshmallow recipe kits out there that contain all of the required ingredients you need. Usually the kits include the essential oils, as well as the marshmallow mixture which you can also use in a number of different recipes.

When purchasing bovine gelatin and shortening, be sure to keep an eye on the packages to make sure they do not contain any gluten, soy or wheat. Since the marshmallows are so fluffy, any trace of these ingredients could potentially cause your tasty treats to fall apart. The bovine gelatin should also have no hydrogenated vegetable oils or artificial flavors, which are common with many store brands of marshmallows.

Once you have purchased your homemade marshmallows, you will need to get the correct supplies. First off, you will need to find some plain yogurt. I prefer to buy an organic brand so I am able to be sure I'm purchasing all natural products. Using plain yogurt will give you an easier time preparing the toppings for your unique creations. However, plain yogurt does not have the same texture as other yogurts and is a poor substitute if you're looking to create a rich consistency in your homemade treat.

Toppings are next on our list. There are several options available when it comes to sprinkling your homemade marshmallows. If you would prefer to add flavor to the mix, try using dried fruits, chunks of raisins, nuts, dried fruit pieces and dried meat. Again, try to avoid using powdered sugar or syrups because they won't have the same consistency as the gelatin. Another handy tip is to cut your marmalade into small cubes and place them on your marmalade stick - this will ensure you don't overfill your mold and have a problem with drying.

The final ingredient that is important in the creation of kosher marshmallows is corn syrup. You can purchase this from any grocery store and it comes in different flavors such as chocolate and orange. If you prefer it over egg nog, try using the cheaper brand of corn syrup. However, you can also add your own personal blend of flavor with vanilla or marshmallows.


When baking your handmade dandies, try not to use any cooking spray or cooking oil. Using such ingredients will interfere with the formation of the luscious marshmallows. Instead, coat the bottom of the pan with cooking spray or vegetable oil. This should be enough to keep the dandies from sticking together but not enough to coat the bottom of the pan. Once dry, remove your dandies from their mold and lay them on a tray. Store in an airtight container to ensure they stay puffed and fluffy for up to two months.
