The Last to be Picked

Bad Duerkheim, German Wine Road

Noble Rot - French: pourriture noble; German: Edelfäule; Italian: Muffa nobile, Hungarian: Aszúsodás. Australia: Sticky Wine)
is the benevolent form of a grey fungus, Botrytis cinerea, affecting wine grapes. Infestation by Botrytis requires moist conditions.
If the weather stays wet, the malevolent form, "grey rot," can destroy crops of grapes. Grapes typically become infected with Botrytis when they are ripe.
If they are then exposed to drier conditions and become partially raisined this form of infection brought about by the partial drying process is known as noble rot.
Grapes when picked at a certain point during infestation can produce particularly fine and concentrated sweet wine.

Over-ripe fruit makes the best wines. I wasn't familiar with this form of mold, but I can see the advantage. I am more familiar with "ice" wine. Similar idea. The photo is absolutely beautiful!!!!! V

An absolutely beautiful shot. Here (Quebec), they let the bottom grapes on the vine until there is a first snow and they freeze, then they pick them frozen, and make wine then. We call it Ice Wine. I checked at the liquor store yesterday and Ice Wine comes in smaller bottles, about 4-5 bottle to a regular wine bottle, and it sells for $60.00 + tax ... each!
