Culinary Institute of America (September 2009)

The Culinary Institute of America (CIA) is an award winning school located in Hyde Park, New York. Frances Roth and Katharine Angell founded it in 1946 as the New Haven Restaurant Institute in Connecticut. In 1970, it moved to a former Jesuit seminary in Hyde Park, New York. CIA has branch campuses in St. Helena, California, and San Antonio, Texas. For visitors, the Culinary Institute of America has 5 excellent restaurants located on its Hyde Park campus, operated by the students. They include: American Bounty Restaurant serving regional dishes from the Hudson Valley of New York, Escoffier Restaurant serving classical French cuisine, Ristorante Caterina de Medici, serving authentic Italian cuisine, St. Andrew's Café, which is a casual restaurant serving a contemporary menu and Apple Pie Bakery Café serving sandwiches, soups, lunch entrées, and delicious, home-made bakery items, including desserts. I went to the Apple Pie Bakery Café, since a local magazine had rated it as “the best place to have lunch in the Hudson Valley." I concur with that opinion, and if I were in charge of grading the students running it, they would get an A+!
