The greener the olives (less ripe), the stronger the taste of the oil. The color of the oil will also be darker yellow/green.

Black olives (riper, having stayed on the tree longer) will produce a milder tasting olive oil, and it will be more golden or clearer yellow in color. Many people prefer to mix green and black.
