this is a pork loin that i bought at costco. it was marinated in mushroom and onion and all i did was roast it for an hour, make some organic mashed garlic potatoes to go with it and serve it with a fresh spring green salad
it was wonderful! it was a huge meal for 4 people and vince's son wes, made 2 sandwiches with the leftovers today!
