The Verdack

In the early 70’s, my family would visit friends and relatives in northern Canada. My Dad’s best friend Verdun owned a hunting and fishing lodge where we would spend most of the summer. One summer they “caught” a large quantity of fish with the help of one of Verdun's sons and they weren’t sure what to do with it all. My Mom and Margaret (Verdun’s wife) started canning some of the fish but that wasn’t going to help process all the fish. So Dad & Verdun came up with the idea to make a smoker out of an old refrigerator. They cut out the bottom, poked a hole in the top, lit a f’ar underneath it and they were off and smoking. After some beers and other distractions, they forgot about the f’ar and insulation also caught on f’ar. The fish got smoked but had a fiberglass insulation spice to it. My brother and I still remember eating some of it but I don’t remember it tasting all that great.
Anyway, in honor of my Dad (Jack) and Verdun’ smoking experience, the smoker is named “The Verdack”
Hopefully my smoking experience will produce better product :)
