The main course arrives. Paulette and Nicole are served "Saumon d’Ecosse rôti, embeurrée de chou vert": the proverbial hunk of protein, grilled, plated, sauced and embellished. But oh, what a sauce, and the flesh of the fish is cooked perfectly, _à point_, the skin crisp and tender. And green cabbage never tasted so good.
