This is the recipe that a number of you requested
FRUIT CAKE.
1 cup pumpkin
1 2/3 cup SR flour
¾ lb. mixed fruit
1 cup juice (eg. Apricot nectar)
1 teas. Honey
1 teas. Bi Carb soda
1 dessert spoon mixed spice
Soak fruit in juice and honey for 1 hour, covered with gladwrap
Cook pumpkin and mash.
Add to fruit, then sift flour, bi carb soda and spice into mixture; mix well.
Bake for 1 hour at 180 degrees.

My Dad was always the big Fruit Cake fan in the family. He had a family recipe that marinated it in homemade Peach Brandy :-)
