The gnocchi cook in one minute in boiling water.
Add to a saute pan with spiralized zucchini and finely chopped garlic and a good drizzle of olive oil and a sprinkling of Italian seasoning, salt and pepper.
Stir-fry until the zucchini is heated through and the gnocchi are slightly browned.
Towards the end of the cooking time, add halved cherry tomatoes.
Top with some sliced scallions and grated Asiago cheese.
