Sushi in New York City (240)

• You've seen most of the typical sushi but here are some of my favorites: the moist and delicately seared bonito and otoro.
• The hikarimono: shiny fishes for neta including the gizzard shad, kibinago (round herring), aji (horse mackerel), sanma (Pacific saury), iwashi (sardine) and sayori (half-beak) the latter 2 not on the plate.
• The lightly marinated engawa (fluke fins).
• Futomaki with kanpyo, fresh crab, mitsuba, eel, mushroom.
