Soy Chicken Chef 7189.jpg

Small cickens are dipped into a vat of heated special soy sauce. After 30 minutes they are removed and hung to cool on the hooks. These are the typical borwn glistening chickens one sees in the windows of many of the Chinatown eateries. Served cool, the soy chicken would grace any table.
