salmon, arugula and gorgonzola cheese omelet (brief recipe)

two strawberries = two eggs
whole grain toast, raspberry preserves
can use smoked salmon if leftover grilled not available

The idea to use gorgonzola and arugula was inspired by a brunch dish enjoyed many times
at a restaurant called "Telephone" on 2nd Ave. in NYC's East Village.
That dish was called curried chicken hash, and used stilton cheese, chicken and arugula.

Hi, there isn't any recipe per se, sorry... Just had some leftover grilled salmon on hand.
What to do with it? It was morning, not a good time for making a salad (usual use for leftover grilled)...
Can't use this salmon directly in an omelette, because the fish flavor overwhelms the eggs.
So I thought arugula and gorgonzola (both very strong flavored), which we always have on hand,
might work as fillings. Folded them into a standard omelette.
Did indeed work well (except the eggs fade into the background, flavor-wise).
