Potage recipe is from The Joy of Cooking, but it is a classic recipe with many variations.
An excellent example of how just a few simple ingredients come together
into something that is very satisfying and fantastic-tasting.
If I have a fennel bulb on hand, I usually add it (chopped) to the leeks.
Served cold with cream mixed in, it becomes the classic vichyssoise.
