Here's what was under the tinfoil on the BBQ tonite:
Throw some butter in a large foil pan.Layer sliced potatoes, sliced carrots, green onions, fresh mushrooms, onions,a bit of cooked bacon.I sprinkle a bit of Montreal Steak Spice as I layer the veggies.Wrap it tight with tin foil, then throw(or gently place)on the top BBQ shelf under medium heat for an hour. Then take it in along with the steak, chicken or whatever and serve it to your spouse.I chose big fat pork chops tonite. After tasting she will forgive whatever wrongdoings you may have been responsible for that day.
I think I'll call this dish Forgiveness Potatoes!

Cool idea, Rick. Perhaps I should cook this up at least once a week!V

Looks very good Rick. I'd leave it uncovered the last 15 minutes or so.
Try this one: Take 2-3 large purple onion, peel and slice in to segments of 4ths or 6ths. Be sure to leave part of the root on, so they don't fall apart. Put them in a foil pie dish and add olive oil, balsamic vinegar, soy sauce, and black pepper. Toss them to coast evenly and put on a medium heat grill for 20 minutes. Perfect with steaks!
