My approach to portrait photography is to put people in front of a plain or unobtrusive background, make sure the eyes are in focus, keep them animated and take a lot of pictures (usually over a hundred). A lot of the pictures, probably most of them, will have bad expressions or not be fully in focus. But some of them are generally outstanding.
