Chili peppers in brine

I read that if you make a simple brine of white vinegar and
canning salt you can preserve the peppers for use later. This is not
pickling them because they are still whole, it is just preserving them
so they can be used as fresh peppers would be. I bought a fancy vase to
put them in and this is the result. I probably should have waited longer
to take the pics because you can still see the air bubbles in the liquid.

Very decorative! Beautiful image. I hope the brining works for you. You probably know that peppers don't have to be blanched. You can just slice or dice them and freeze them for use later. I've done it and it works.
