This method of cooking whole fish requires absolute freshness. The only seasoning is the bed of salt, most of which is removed before serving, and a squirt of lemon juice at the table.
Some recipes call for some ali-oli (garlicky mayonnaise) on the side, but it's really unnecessary. The flavor is superb, and not excessively salty.
