An "interpretation" of a beef stew, in the style of Michoacán, cooked with onions, garlic, carrots and courgettes/zucchini. Seasoned with chiles anchos, guajillos and chipotles, sesame seeds, various sweet spices, and a touch of chocolate Mexicano. (This is not the authentic version, often made with several types of meat, some of it often dried.) The results, nevertheless, were delicious.
