On many disaster sites, the dishes, pots, pans, utensils and cambros (the large food-holding containers that keep food hot or cold) must be washed, sanitized and air-dried outdoors, using the "three tub method". Keeping the minimum recommended water temperatures can be a daunting task, especially in cold weather.
