Making Jelly: Extracting the Flavor of Fruit

It all started when a friend of mine cleaned out his freezer and found two bags of frozen blackberries which he brought to me, figuring my kids might like them. I put them in my freezer and mentioned that I might make a batch of jelly from them. About a month later he showed up with a shopping bag full of apples from a tree in his back yard, asking if I was still planning to make jelly. I said I was still thinking about it, so my wife peeled and sliced the apples and put them in the freezer. A week and a half or so ago he came by and asked if we wanted some more apples since he was getting ready to mow his lawn and there were so many that he would have to shovel them up and throw them away before he did. I went to his house and picked up a tub full of the best of the lot...
