Marco Hodges slow-cooking Puerco Pibil

The pig-garlic bulb-corn roast was a special Saturday treat that Mark Hodges did for
the project personnel once each year.

Cochinita pibil (also puerco pibil) is a traditional slow-roasted pork dish from Yucatán. Preparation of traditional cochinita or puerco pibil involves marinating the meat in strongly acid citrus juice, coloring it with annatto seed, and roasting the meat while it is wrapped in banana leaf.

Marco's famous pig roast celebration was my first exposure to SERIOUS garlic consumption...Whole garlic bulbs wrapped in foil and mellowed over the hot coals of a pit fire.
