Different schools of thought…

Nyon - Vaud (Switzerland)

I made a salad of tomatoes and mozzarella my own way, with tomatoes from our kitchen garden, avocados and fresh mozzarella (made by a very nice Italian vendor, whose products I buy every Saturday at our local street market).
I seasoned the salad with a kind of very light homemade mayonnaise diluted with a little milk and I added a little of green pepper directly from the grinder. No garlic, no extra salt, no onions, most of all no onions!
A few days ago I took a photo of a very choreographic Caprese salad my husband had ordered in a nice little restaurant.
You can see the picture of that salade here on the left.
It looked visually very beautiful, but it would have never been at my taste because of the raw onion.
I think raw onion kills all the delicate flavour of every dish.
There are different schools of thought on this subject….

I will take the middle way, there is a time for raw onion and there is a time not to use it. It all depends on the dishes, the mood and the occasion. Wonderful food photos by the way, the one of the salad that you made is excellent.

As an Italian in California, I have to approve of the addition of avocado especially with the liaison of a lightened homemade maionaise.I will have to try this immediately with the fresh mozzeralla I just got. As for the us e of raw onion, I must agree with Marisa that raw onion is a jarring note that can easily mask the sweetness of the fresh cheese and clash with fie olive oil. But that is my taste and "de gustibus non disputandum."

The photo is as enticing as the recipe. Brava, Marisa.

I don't mind raw onions from time to time....but I wouldn't mind eating this salad without them either! it looks absolutely yummie!

On top of being an excellent photographer and writer...you are a chef! Nicely put together, love the sprig of little blooming flower or spice, whatever it is. I'm not a fan of avacado's either...but I need onion! :)
