Cepes I are delicious; nutmeg oil is a novel idea, and combined with grapes, rocket,chives,tomato and lallo rossa this seems a fine mélange of tastes.

This creation looks great and the porcinis are not really raw anymore, because if you marinated them with some oil and vinegar, then they start to cook cold, like for instance a carpaccio would turn brown if marinated too long! So the reason to create such dishes is the knowlwedge of the chemical process while marinating food raw with salt, lemon juice, vinegar etc., otherwise to eat cepes raw is rather disappointing! The nutmeg oil sounds great to me but must be strong I guess! Guten Appetit!
