Over the pass east of Lima is La Oroya, where we were guests at a former parish of the Padre.
We were introduced to chebice, fresh fish "cooked" in lime juice, a national dish in Peru.
Later, back in Lima at another previous parish, it was Pisco Sours, the national mixed drink.
