Crawfish Shells

Sugar Land, Texas

In Texas and the south, boiling and eating crawfish is a long standing family tradition.
We eat crawfish at places besides the home, whether it be in restaurants, family reunions, football games, or at company gatherings.

The richness of the colours is a pretty good reflection of the richness of the flavours, for those of us who can't be there to sample the latter at the moment.

They look interesting. Pretty color. I've never had them. We call them crayfish up here and I used to catch them as a kid.
