You see what I mean? There is no need to mess about mixing up yeast and getting it started when you do slow rise. You just put the ingredients together (all cold), knead really well and with the bread machine doing the kneading you don’t even have to put in the elbow grease then the yeast in the dough does its wonderful chemical reactions slowly and surely overnight then you have something so sublime waiting for you in the morning that is ready in the time it takes to have a shower. How can that not be a wonderful thing? It takes a minute or so to weigh out the ingredients, about five minutes to shape the rolls and put them into their tents and a few seconds to pop them into the oven.
I may never be a baker of Paul Hollywood’s standard but it doesn’t mean I’m not a bread evangelist. There is nothing like freshly baked bread. It’s been our staple food for thousands of years - since long before we even heard of potatoes or (in the west at least) rice. Bread is good – let no-one tell you any different!
