Cantharellus formosus

Cantharellus formosus; Chanterelle; Pacific Golden Chanterelle.
Chanterelles are the most popular of all wild mushrooms and grow in abundance in the forests of the Pacific Northwest. They are excellent in omelettes, as a garnish for steaks, in pastas, in casseroles, or just about any other way your want to serve them. Most often they are sauteed in butter with diced shallots and a bit of garlic. They are meaty, bursting with flavor and much better than buttons bought at a grocery store. They are great mushroom to go out picking in the late summer or fall, since their bright colors make them stand out at a distance on the forest floor.
