A very common comment I found in the net about Takayama is "you've got to try the Hida beef". We have had wagyu here, so how much better can it get? The second kaiseki dinner we had at Takayama Ouan was basically all about hida beef. We started off with Hida beef sashimi, braised Hida and finally the huge serving of Hida for shabu shabu (photo). Simply soak lightly in the hot broth and a dash of light soya sauce.....it is as good as wagyu.
The whole town serves Hida....
