Post processing fun in this case refers to letting your hair down and doing more than a routine processing job. You could do an interesting monochrome conversion, a monochrome with some colour painted back, or go wilder with layers/compositing, using channels in Lab mode, using inversion, blending modes, hyper saturation or anything else that lifts the image out of being a conventional photo.
