Aileu, Timor Leste

The bakery was housed in the backroom of the family home. When we passed through in the morning, it was well lit with sunlight coming through on a bright day. But we missed our 'window of opportunity' to see them working, so had to go back late afternoon for the second shift. By then it had rained and was heavily overcast, causing the baking room to be very dark.

Thanks to the willingness of the baking assistants to be patient, and my graceful guide's ability to aim my makehshift reflection screen (a sheet of corrugated iron that usually functions as toilet door) I managed to make this shot under extreme darkness conditions.

Thanks Richard. They were the rolling team. The baker, father to at least one or two of them i think, would cut slices of dough and chuck them across the table to his assistants. they would knead it more, roll it into a ball and roll the ball back to them. He'd finish them off and put them on the baking tray, waiting to rise a bit more and then go into the ove. Perfect teamwork!
