7500 gallons of mash, made up of corn, rye, water and yeast, is slowly turning and bubbling, naturally fermenting into the mixture that will find its way into one of the huge copper stills, when the time is right. Its amazing to think about the fact that these HUGE vats made of hardwood and held together with steel bands and turnbuckles can contain all that weight without leaking. These vats are 2 stories tall, and have been around a very long time!
