The water from all those mountain springs and rainfall is collected in Levadas - "pipes" made to transport the water to the beach level, where the climate is perfect for growing any type of crop, with yearly temperatures between 16-25 degrees and no rainfall what so ever. Up in the mountains it can snow thou at worst.
