After boning, trimming and searing in a very hot pan with olive oil. The one on the right got a bit too much while my back was turned. /
Désossé, extérieur envlevé et passé à la poelle (très chaud) pendant deux minutes par face. Celui à droit est resté un peu trop longtemps.
