Lunch is our only meal of the day so we try to make it a good one. Ginny loves Pacific salmon and so do I. She bakes it with some oil and herbs (9 minutes at 425F) and it comes out great every time. Recently I have been experimenting with roasted potatoes and sweet potatoes and have it down to a science. Chop them up, douse them in olive oil and cook until done (400F for 30-40 minutes.) Throw in some grilled bread and a beer and VOILA, a great lunch.
