My son Robert arranged for a DoorDash delivery from Rudy's Barbecue on Saturday evening. It was delicious. The meat selected is their tender brisket which is cut from the point (deckle) of the brisket. It is juicy and tender. We love it! There was so much food that we have been enjoying yummy leftovers for a few days. Today I made a brisket sandwich. That brings up a philosophical question: is it proper to put barbecue sauce on brisket. In my opinion the answer is, "No way, Jose." The reason is that well cooked brisket is so good that any sauce interferes with the flavor. Rudy's has a particularly good dry rub and it produces an excellent "bark" that beats heck out of anything you could imagine adding to it. I am sure there are others who would disagree. It is my preference, however.
