What do you do with left over turkey? A long time ago we would debone it and freeze it. You know what happens then. The next year all that frozen meat is still in the freezer. Many years ago we decided that we would take all that turkey and convert it into something to be eaten, not frozen. In the past it was Ginny's superb turkey and sausage gumbo. This year I decided to make turkey soup. I boiled the carcass and got a very nice stock. It ended up with about 2 1/2 pounds of turkey meat. Carrots, Onions, celery, herbs. Yummy. It goes very well St. Arnold's Elissa IPA. BTW - those are thin bread sticks, not chop sticks.
