Another Lenten Friday. And yes, we had catfish again. I love oven fried catfish. As usual Ginny wanted to have asparagus and as usual I wasn't going to have any of that. So I went to the pantry and examined the canned vegetables. I decided on green beans. One of the main reasons is that it is low in carbs and high in fiber. Just throwing them in the microwave and heating them up was not going to work. As you all know, plain canned green beans are pretty yucky. So I drained them, got out a frying pan and sautéed them in butter with effective amounts of salt, pepper and onion powder. They turned out very good.
