I was hungry and wanted to cook something hearty without going to the store. We had finished off the left over stuffed peppers and had no more peppers in the house. I got to thinking that the best part of the stuffed peppers was the stuffing so why not just make some stuffing. I had some ground beef in the freezer and the rest is history. Ginny chipped in for this tasty repast by making her famous roasted yellow squash. Life is good. Eat well.
