OK, another food picture. Hernan has lots of them. I just do it when I feel like it. This was one of those days. Ginny found some nice catfish filets at Kroger. Normally we have a fried catfish feast at trivia on Wednesday night, but there was none this week because of the hurricane. It was decided to deep fry the filets and simulate the great meal we get on Wednesdays. It has been a long time since I have deep fried anything. Of course, it was mandatory that this task be accomplished outside on the side burner of my grill. I decided to use a half inch of oil in the cast iron frying pan rather than pulling out the big pot and investing two quarts of oil in the adventure. Although temperature control was a little random and the batter was a little too thick, we ended up with a nice feast. Throw in some cole slaw, mac and cheese and tartar sauce. Yum. Oh yes, a beer helps in the process.
