We have been here with Richard and Christiane to help out while Andrew and Austin are still in the NICU. It is a hectic time for them, so we are doing our best to make their life easy. By this time we have established a routine which seems to be working fairly well. We all get up in the morning and hang out until just before noon when Richard and Christiane head to the hospital to work with the boys. Then Ginny and I have about 6 hours to do what we want. Sometimes we go shopping for food and sometimes we do stuff for them around the house. One thing we have been doing it preparing meals. So today, it was going to be enchiladas and I was assigned to prepare them. The one thing I learned from Richard that is really helpful in the preparation is making the corn tortillas more pliable and less crumbly. This has always plagued my enchilada preparation. His technique is simple. Lightly oil both sides with a pastry brush and heat in a skillet for about one minute with a flip in the middle. You end up with pliable tortillas which are easy to roll into enchiladas. We had a good meal of the enchiladas, with an appropriate side of refried beans and, of course, beer. Life is good.
