After church this morning I decided to stop at Kroger on the way home to get a few things. I strolled by the meat department and found two packages of coarse ground beef marked down to $1.49 per pound. Perfect for chili. The dates on the label were OK, so I snapped them up. I headed for the dried ancho chilies and grabbed a bunch of them and snapped up a bunch of cilantro. Now, I was all set to make a nice pot of chili. Here are the ingredients before the cooking process began. This was the first time I used dried anchos for the base, and it worked out great. This type of preparation makes a very deep red-brown chili. I really enjoyed making and eating this pot of red. I will have leftovers for several days. Life is good. The good news is that Ginny gets back from Oregon on Tuesday night. |
