It was a typical Sunday here. We went to mass at 7:30 as usual. Father Bob treated us to an additional eight minutes of sermon, how lucky can we be. Well, I'll tell you how lucky. David and I cooked a great brisket yesterday and we ended up with a huge amount of chopped beef that needed attention. If you are followers of Triple D (Diners, Drive Ins and Dives) you may have seen this episode about T-Bone Tom's in Kemah. When Robert and Laura were here last we took a trip down there and had a great meal. Also a BIGASS meal. Anyway, one of their signature dishes is armadillo eggs. That's what David and I made today. An armadillo egg is a jalapeno pepper wrappped around some chopped brisket which is coated with flour, egg wash and bread crumbs then DEEP FRIED. I emphasize the last point becuase I have had a hell of a lot of fun with deep fat frying stuff. If you are from California and exist on a diet of tofu, wheat germ and green tea, you won't understand because you are retarded. So anyway, David and I followed the instructions from the Triple D segment and they came out great. Of course a little beer, in this case Black Lager from Shiner added to the pleasure of the event. I made a dipping sauce to go with it. We enjoyed it. Life is good.
