Sometimes I start thinking about making some good food and then my mind starts wandering. Mostly, I figure if I like the taste of two things, then mixing them together will really taste good. Of course, bacon is always on the top of the list along with garlic. So this morning I decided to make an oven baked omelette incorporating bacon, garlic, green onions and cheese. Yeah, I know that those are standard things for omelettes, but I like to humor myself into thinking I thought it up. So, David and I got busy and put this thing together and it turned out great. Now, here is my twist. I really like a salsa verde made with poblano peppers. I had some freshly made in the fridge, and I topped my omelette with it. Outstanding. This photo doesn't include the salsa because I am told the colors would clash. OK.

Thanks, Tom. I am learning from my son Robert. He never uses flash and always uses custom color balance in the camera.
