I have a similar problem with the sky. Maybe a graduated filter would work. Or is there a program where you can expose different parts of a Raw image differently?

Calm water lovely reflections. I see you have trouble with blown sky. When you work out how to overcome the problem while shooting please let me know, I have a similar problem with landscapes.
